Ask Iohn; he made an awesome batch for War this year. Smile By the way, I am planning my first batch as well.

If you want good instructions, Iohn told me of websites that have instructions for simple gallon batches.

That's the website I first used too. Only advice I have is to thoroughly sanitize everything you use. My 2nd batch went bad because of stray bacteria even though I thought I cleaned everything properly.

Also, I found that the end result was WAY too sweet, and took some serious getting used to. I gave away at least a gallon b/c I couldn't stomach how overwhelmingly sweet it was. That was after about 3 months in the bottle. After 6, it tasted much better, but still very sweet. If you're used to bitter alcohol (ie. beer) use less honey, and throw in a dash of brown or white granulated sugar. A couple sprigs of mint should also help put some bittering in the flavor.

What if I had one half of the bottle sweet, and the other half bitter? Both in one batch.

Actually I changed my mind a few days ago; I've decided to wait on making my own mead. Not because of legality issues or cost of materials, I'm just not as interested in making it right away as I was initially. But, I'm still open to any other pointers people have. This could make a great thread for recipes.

Example: More bitter/more sweet, has flavorings x,y,z in it, preparation, and resulting taste.

Personally, I don't know what kind of fruits were native to most European countries at the time of interest, so my guess is that there were many different flavors of mead in reality. I want to make a realistic mead eventually, but I don't believe that oranges were native to most of Europe, unless they were an easy import before 1500. I will do research in the meantime.

holy crap. My friends just got done fermenting we had a taste before he bottled it up. Sweetest hooch i ever drank NOMZ.
